1 ounce of Freeze Dried Strawberries– this adds the color and some extra fiber
Optional: 1 tablespoon cacao nibs or dark chocolate chips – for a touch of indulgence
Step-by-Step Recipe Instructions
Prepare your ingredients
Soak the dates in warm water for 10 minutes if they are dry. This softens them for easier blending.
Blend the Freeze dried Strawberries
Place the Freeze dried strawberries in a food processor and pulse until finely ground/powdery. Pour into a bowl and set aside.
Add the dates and other ingredients
Into the same food processor, add the soaked dates, cashews, cashew nut butter, and salt. You can take an extra minute and blend the dates alone, before adding the other ingredients, but I like making recipes that are quick for our busy lives! Blend until the mixture sticks together when pressed.
Add optional chocolate
If you want a chocolatey twist, fold in cacao nibs or dark chocolate chips by hand.
Form the balls
Scoop out tablespoon-sized portions and roll them between your palms to form balls, then roll ball in the strawberry powder. Makes about 16 bites.
